Rooted in the highlands since 1988.

Hillkoff was founded in Chiang Mai in 1988 with a simple belief: that Thai Arabica, grown at altitude in rich volcanic soil, could rival any coffee in the world. What began as a single co-operative partnership has grown into a network spanning twelve growing regions across Northern Thailand.

1988

Founded in Chiang Mai

Hillkoff is established with a single co-operative partnership in Doi Suthep, built on the belief that Thai highland Arabica could rival the world’s best.

1995

First export to Japan

Hillkoff ships its first international order to a specialty importer in Tokyo — placing Thai Arabica on the world map.

2004

Roastery opens in Chiang Mai

In-house roasting begins, giving us full control over development, freshness, and consistency from green bean to final bag.

2016

Rainforest Alliance certification

Partner farms achieve Rainforest Alliance certification — formalising environmental commitments held since day one.

2021

Beyond Gravity series launched

Our experimental specialty range — fermented, anaerobic, and natural-process lots — pushes the boundaries of Thai Arabica.
